Southern corn souffle pudding

This is a yummy side dish eaten all through the southern states of the USA. Was addicted to it while I was there

Serves 4 to 6

Ingredients

Method

  1. Preheat oven to 180 C
  2. Grease a medium casserole dish with melted butter.
  3. In a bowl combine the dry ingredients with the corn.
  4. Add the beaten eggs, milk and Tobasco if desired.
  5. Pour into prepared casserole dish and bake for 1 hour.

Notes & Tips

You can add 1 cup of grated cheese or .5 cup finely diced and sauted capsicum for a different flavour

    This was really delicious. I have never tasted anything like it before. I would never have thought to put these ingredients together and bake it. The tobasco sauce gave it a very subtle kick. The prep time made it ideal for an afterwork dinner. Well done ! Looking forward to the next post.
