Roast Pork Belly with Crackling

This is a firm favorite when friends come over for drinks. It disappears in a flash. Its one of those substantial nibblies that helps soak up the alcohol. In reality, you could cook this along with veges, and you would have a bake dinner as in my opinion its the best tasting part of the pig

Ingredients

Method

  • 1.

    Preheat oven to 250 degrees

  • 2.

    Score skin evenly in fingers approx 1.5 cms wide and 4cms long

  • 3.

    Pour boiling water over skin to open up the scoring

  • 4.

    Rub salt all over skin

  • 5.

    Place in baking dish on a rack

  • 6.

    Bake for 30 mins

  • 7.

    Turn oven down to 180 degrees and bake for a further 1 hour

  • 8.

    If after this time the pork skin has not crackled, turn up oven to 250 degrees and bake a further 10 mins

  • 9.

    Cut meat into 3 x 4cm pieces and watch it fly off the plate

You know what roast pork looks like, but sorry, my friends ate it before I came back with the camera
