Spanish Salad


A variation to a recipe in Jill Dupleix's book 'Very Simple Food'. I altered this recipe to suit the tastes of my family.

Ingredients

Method

  1. Whisk dressing ingredients together in the serving bowl.
  2. Cook the green beans and asparagus briefly.
  3. Cook the bacon until crispy then tear it into pieces.
  4. Cut the tomatoes and cucumber.
  5. Rinse the rocket and baby spinach.
  6. Crumble the goats cheese into pieces.
  7. Toss all the ingredients together and your done!

Notes & Tips

Tossing the salad while the bacon, beans and asparagus are still hot will slightly melt the goats cheese through the salad - YUM!
