Homemade sushi is the best..
Wash rice with 2-4 changes of water to remove excess starch then drain well.
Place in saucepan with water and bring to the boil with a lid on. Turn heat to low and simmer for 15 minutes.
Remove from heat and sit for 10 minutes. Turn rice into a non metal bowl & turn rice gently with a spatula and fan with carboard to cool down.
In microwave proof bowl warm vinegar, sugar & salt until sugar dissolves.Pour over warm rice and gently turn rice with a spoon. Leave to cool
Lay sushi mat and place 1 piece of nori shiny side down. Place about 1/4 cup rice over the nori, pressing down until its 1cm thick, leaving an edge at the top. Lay selection of cooked chicken, cucumber and wasabi. Roll up sushi and wrap in gladwrap and refridgerate.
Cut into slices and serve with soy sauce.
