This is a fantastic brownie recipe for those chocolate addicts like myself. I originally got the recipe from a lady at work and modified it slightly.
I get regular requests to make them and they have become a family favourite. If you cut them a little larger you can serve them as a dessert warmed in the microwave with a scoop of vanilla ice-cream.
Butter a brownie pan and line with baking paper (gladbake).
Preheat oven to 180 degrees.
Break chocolate into squares and place on the bottom of your prepared baking pan.
Gently melt butter in microwave.
Place sugar, cocoa, eggs and vanilla in a mixing bowl and combine using a spatula.
Add melted butter and mix well.
Add sifted flour, salt and mix well.
Cook in preheated oven for 30 minutes.
Remove from oven and cool in pan.
When sufficiently cool cut into squares. You can remove by gently pulling on the baking paper and cut on a cutting board if you like.
Lightly dust with sifted icing sugar.
Refrigerate in a sealed container until needed.
This recipe keeps in an airtight container in the fridge for weeks and freezes well.
