Minted Moroccan Beef


Easy, healthy and very very tasty!

Serves 2

Ingredients

  • 750g beef rump steak
  • 2 tablespoons of lemon rind
  • 2 tablespoons on fresh mint, chopped
  • 1 tin of crushed/diced tomatoes
  • 1 brown onion
  • 2 teaspoons of cumin
  • Green beans to serve

Method

  1. slice beef rump into strips
  2. Cook onion in a small amount of olive oil until soft
  3. add cumin and lemon rind and cook for 1 minute
  4. Add steak and cook until browned
  5. Add tinned tomatoes and simmer for 5 minutes
  6. Add mint
  7. Serve with steamed green beans
