Kaffir Lime barramundi, with herb salad

2 large barramundi fillets, scored dressed with extra virgin olive oil. Pick 7-8 double kaffir lime leaves. Heat up bbq till hot, place un scored side of barramundi on hot plate for 2-3 minutes. Prepare Kaffir Lime leaves, rip leaves either side of leaf vein, and place shinny side up. Now turn barramundi onto leaves 4 per fillet. cook for another 6-8 minutes. The heat of the BBQ will draw more oil from the kaffir lime leaves, which infuse and create a fantastic and clean tasting fish. While fish resting you can prepare simple herb salad and plate up. It's a beautiful thing!
