Carrot Salad

A simple side dish to be served hot or cold


  • 3-4 carrots, thinly sliced

  • 1 tsp sugar

  • 3-4 garlic, chopped

  • .25 tsp ground cumin

  • juice of .5 a lemon

  • 2-3 tbsp extra virgin olive oil

  • 2 tbsp chopped fresh corriander

  • salt and ground black pepper


  • 1.

    Boil or steam carrots in lightly salted water until just tender but not soft.

  • 2.

    Drain and leave for a few moments to dry, then put in a bowl.

  • 3.

    Add sugar, garlic, menon juice and olive oil to the carrots and toss together.

  • 4.

    Add the herbs and season.

  • 5.

    Serve warm or chill before serving
