Turkey Curry


Mean, lean and hot!!!

Serves 2 to 4

Ingredients

  • turkey - roughly chopped
  • 1 medium onion
  • 2 cans diced tomatoes (375ml)
  • 3 tablespoons curry paste (medium or hot) depending on how hot you like your curries!
  • 250 ml water (approx)
  • 2 tablespoons olive oil
  • Basmati rice - 2 cups
  • Naan bread

Method

  1. Heat oil in pan and add finely diced onion, cook until softened. Add turkey and mix together. Once heated through add the curry paste and mix thoroughly. Add diced tomatoes. Allow the curry to warm through then add water (a little at a time) stir through, keep adding water until the required consistency is reached. Allow the curry to simmer whilst the rice is cooking. Cook Basmati Rice in rice cooker according to the instructions.
  2. Serve with Naan bread (great for mopping up all the sauce!!)

Notes & Tips

This is a great way to use up leftover turkey. Turkey sandwiches are okay but you can't beat a Turkey Curry. It's a very quick and easy dish to make and washed down with a chilled glass of white wine makes it very satisfying.
