Zucchini & Corn Fritters

Ingredients

  • Self raising flour 1 cup. bicarbonate of soda 1/2 teaspoon, italian herbs 1 teaspoon,black pepper corns cracked 1 teaspoon 1 egg whole, 1 cup of milk, 1 cup of corn kernels 1 whole zucchini grated.

Method

  1. Pre heat heavey based fry pan, Combine self raising flour, bi-carb of soda,italian herbs and cracked black pepper in a large bowl. Mix egg and milk together, then gradually mix in to the flour, stir in the corn kernels and grated zuchinni. drop tablespoons of the mixture on a lightly oiled pre heated pan. cook until fritters are brown underneath, then turn them and cook the other side. serve warm or cold with a salad.
