Squidgy Fruit Cookies


A cross between a cookie and a bun, these virtually fat and sugar free delights are totally guilt free!

Serves 10

Ingredients

  • 2 ripe medium sized bananas
  • 2 egg whites
  • 155 g stoned and chopped dates (use extra raisins in place of dates if preferred)
  • 90 g raisins
  • 135 g rolled oats

Method

  1. Preheat oven to 180C
  2. Mash bananas to a rough texture
  3. Add egg whites and chopped dates, ensuring dates are separated and well-coated with mixture
  4. Mix in rolled oats and raisins
  5. Set aside for 10 minutes
  6. Place teaspoons of dough on baking tray (I prefer to place a silicon baking sheet on the tray first), flattening with the back of the spoon
  7. Bake for 20-25 minutes until the edges are lightly browned
  8. Allow to cool
  9. Store in air-tight container in refrigerator or freezer
