Gnocchi Alla Matriciana


Gnocchi with a chilli tomato sauce

Serves 2 to 4

Ingredients

Method

  1. Boil potatoes until tender, then drain, mash or rice potatoes & leave to cool.
  2. Stir through egg & most of the flour. Add S&P.
  3. Knead together to get a mixture that is not too sticky (add more flour if needed)
  4. Roll into 4 sausages & cut into bit size pieces.
  5. Indent with a fork.
  6. Bring a pot of water to a slow simmer & cook gnocchi until they float.
  7. Cook sliced onion, add crushed garlic & sliced chill until tender.
  8. Add bacon & fry.
  9. Add splash of wine & tin of tomatoes. Season well.
  10. Simmer for 5 minutes,
  11. Add torn basil & serve on gnocchi
