Quick and easy slice to serve with a fresh garden salad. Different vegetables can be used depending on what you like.
Grate unpeeled zucchini coarsley, finely chop onion and bacon. Combine zucchini, onion, bacon, cheese, sifted flour, oil and lightly beaten eggs.Pour into well greased lamington tin (base 16cm X 20cm) Bake in moderate oven 30 to 40 minutes or until browned.
I have also used corn kernels and grated carrots for added variety.
