Basil Pesto stuffed chicken with rocket salad


A fillet of chicken stuffed with home-made pesto crumbed and served with a rocket salad

Ingredients

Method

  1. preheat oven to 180oC
  2. Start with the pesto
  3. bash the basil and garlic in mortar and pestal
  4. add 1tbsp of olive oil, cheese, nuts and salt and pepper to taste and continue to bash
  5. cut a 1.5cm slit in the chicken(this makes the hole to stuff)
  6. stick finger in the hole to make a cavity
  7. stuff cavity with pesto
  8. scramble eggs and place in a bowl
  9. put flour and crumbs in separte bowls
  10. place stuffed chicken fillet in flour and cover
  11. dip fillet in egg and make sure it is coated
  12. dip fillet in crumbs
  13. if u want a really golden outside give the chicken a quick fry-up in a pan with canola oil
  14. otherwise just put chicken in oven and cook for 30-40min
  15. while chicken is in oven prepare rocket salad
  16. julienne carrots and celery and add to rocket
  17. mix soy, mustard and rest of olive oil and add over the top of rocket mix

Notes & Tips

thigh is cheaper than breast and is easy to work with you can use bought pesto but home-made is a lot crunchier and is better suited this recipe gives room to add a sauce to the chicken if u desire and add a another side dish like pototoes if u want. this meal is a good source of protein, good fats and vitamins and minerals
