Green Chicken Curry with Eggplant

I discovered a company call readythai go to their website
They have the best quality and tastiest curry sauces I have ever had. The sauce is already made so just need to add vegetable and chicken. Too easy.


  • 1kg readythai green curry sauce

  • 1kg organic or free range chicken breast slicked or diced however you prefer

  • 1 large eggplant diced with skin and microwaved to just soften.


  • 1.

    Empty sauce into saucepan and simmer for about 5 minutes do not boil.

  • 2.

    Add chicken breast (if using thighs best to saute to remove excess fats)

  • 3.

    Add precooked eggplant

  • 4.

    Mix together for about 15 minutes.

  • 5.

    It smells so good

  • 6.

    Get your rice ready and you are done.


Just add some coriander or chilli for colour to decorate the plate.
