Green Chicken Curry with Eggplant


I discovered a company call readythai go to their website www.readythai.com.au They have the best quality and tastiest curry sauces I have ever had. The sauce is already made so just need to add vegetable and chicken. Too easy.

Serves 6 to 10

Ingredients

  • 1kg readythai green curry sauce
  • 1kg organic or free range chicken breast slicked or diced however you prefer
  • 1 large eggplant diced with skin and microwaved to just soften.

Method

  1. Empty sauce into saucepan and simmer for about 5 minutes do not boil.
  2. Add chicken breast (if using thighs best to saute to remove excess fats)
  3. Add precooked eggplant
  4. Mix together for about 15 minutes.
  5. It smells so good
  6. Get your rice ready and you are done.

Notes & Tips

Just add some coriander or chilli for colour to decorate the plate.
