Perfect Fried Rice

a good home cooked fried rice

Serves 2 to 4

Ingredients

  • 50ml peanut oil
  • 3 eggs, whisked
  • ½ cup small prawns – cooked
  • ½ cup shallots, finely chopped
  • ¼ cup peas
  • 200g bbq pork, diced (char sui from asian restaurant)
  • Cooked long grain rice (approx 2 – 3 cups)
  • Good pinch salt
  • ¼ teaspoon white pepper
  • ¼ teaspoon sugar

Method

  1. Heat wok and add oil.
  2. Pour in egg, stir until just cooked.
  3. Add rice – toss well and break up with the egg.
  4. Add salt, pepper and sugar. Toss well.
  5. Add rest of ingredients – toss well until heated through.
