Best Chicken Curry

A very tasty tender chicken recipe that doesn't bite but leaves you wanting more.

Serves 4

Ingredients

  • 1.5kg chicken thigh fillets – halved
  • 2 or 3 onions, halved then sliced
  • 6 cloves garlic, crushed
  • 3 tspn malaysian curry powder
  • ¼ tspn chilli powder
  • 1 tspn grated ginger
  • 1 tspn ground coriander
  • 1 tspn ground cumin
  • 1 tin lite coconut milk
  • Dash sweet chilli sauce
  • 3 tblspn tomato paste
  • 1 tspn chicken stock powder
  • 2 bay leaves
  • Dash red wine

Method

  1. Fry onions & garlic til just soft.
  2. Add spices, fry 1 minute, add chicken and brown slightly
  3. Add tomato paste, wine, coconut milk, chilli sauce & bay leaves.
  4. Simmer 3/4 to 1 hour or until chicken is cooked and tender.
  5. Serve with rice and roti bread. Can have salad or veg too.
