Light chicken balls


small tasty chicken ball made with greek yogurt ant savory crackeers

Serves 2 to 4

Ingredients

  • Chicken mince
  • Greek yogurt
  • Jatz crackers
  • lemon zest
  • pepper
  • Tuscan seasoning

Method

  1. 500g Chicken mince in bowl, crush crackers in bag with rolling pin. Put equal amounts of mince and crackers into a bowl,add lemon zest, herbs and pepper. Spoon in a tablespoon of yogurt at a time till a moist dough like consistancy.
  2. Roll in extra cracker crumbs. Fry lightly in a good quality olive oil till golden brown.
  3. sever with salad or with pasta in a tomamto sauce.
  4. These meetballs are great hot or cold.

Notes & Tips

Try using different herbs, or tey a little minced garlic and some grated ramano cheese.
