Roughly chop zucchini, peeled onion & potato. Fry in 1 tbsp oil until a little golden. Add other ingredients & simmer until tender. Puree with a stick blender. Serve with toasted croutons sprinkled with parmesan cheese and/or a drizzle of cream.
