Chocolate Pudding

This is a great dish in the winter months. A friend of mine makes this all the time and never fails to please.


  • 350g baguette, cut into 2cm cubes

  • 170g dark cooking chocolate, chopped

  • 170g white cooking chocolate, chopped

  • 5 eggs

  • 2 tablespoons caster sugar

  • 2 teaspoons vanilla

  • 1.5 cups milk

  • 2.5 cups cream


  • 1.

    Put bread and chocolate into large bowl. In a separate bowl beat together the eggs, sugar and vanilla. Gradually beat in 1 cup of milk and 2 cups of cream. Stir into the bread and chocolate mixture and let stand for 30 mins. Preheat oven to 180 C. Grease 33 cm x 23 cm baking dish. Put mixture into baking dish. Mix together the remaining half cup of milk and half cup of cream and pour over mixture in dish. Sprinkle with some extra castor sugar. Bake 1 hour until edges are golden and custard set. (Can be done earlier and warmed up in microwave). Serve with Baileys cream

    Baileys cream

  • 3.

    Mix together equal quantities of custard (ie the supermarket type) and thickened cream. Add Baileys to taste (ie a lot).
