very quick and easy favourite - biscuit base, caramel filling and whipped cream on top! Yum.
Place Scotch Finger biscuits into bottom of slice tray. Do not crush, lay biscuits flat and close together as they come out of packet.
In a microwave safe bowl, combine cream, milk, sugar and custard powder. Mix well until smooth and place in microwave on high for 3 minutes.
Remove from microwave, stir again and replace back in microwave for further 3 minutes, on high.
Stir well, return to microwave and cook on high for approximately 2-3 more mintues. Keep checking after each minute, caramel is cooked once it starts to thicken and come away from sides of bowl.
Pour over scotch finger base and refrigerate. When cold and set, top with whipped cream and grated chocolate.
Slice is best made day before required, as caramel tends to soften biscuit base and makes it easier to slice into squares. Caramel is not overly sweet. Try to avoid using light cream and low fat milk - these choices make caramel runny and not set properly.
