A delicious self-saucing chocolate pudding
Preheat oven 200C, brush 4 x 1 cup ovenproof dishes with melted butter and dust lightly with cocoa powder.
Place the prepared dishes on a baking tray
Stir the chocolate and butter in medium,heavy-based pan over low heat until butter has melted and the mixture is smooth.
Set aside to cool.
Place the eggs, sugar and vanilla in the small bowl of an electric mixer and beat until mixture is pale yellow and thick.
Add cooled chocolate mixture to the egg mixture along with the sifted flour, baking powder and cocoa.
Fold in with large metal spoon until just combined.
Spoon equal amonuts of the chocolate mixture into the prepared dishes.
Bake for 12 mins.
Carefully loosen edges with the tip of a table knife, upturn dishes onto plates giving a gentle shake to turn out.
Dust with icing sugar and serve immediately.
cooking time can depend on the oven so a "trial" run may be necessary to make sure a crust forms around the pudding but it is stil gooey in the middle
