Pam's Macadamia and Sultana Cake


This is for people who love macadlmia nuts and sultanas. Enjoy it warm with custard as a desert or cold with tea or coffee.

Ingredients

  • Combine and let soak
  • 1 1/2 cups sultanas
  • 1 1/2 cups macadamia nuts
  • 1 cup chopped dates (optional)
  • 1/3 cup sherry
  • Sift together twice
  • 1 cup self-raising flour
  • 1 cup plain flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon bi-carb. soda
  • 1/2 teaspoon allspice
  • cream
  • 250 gm butter
  • 1 cup castor sugar
  • 1 teaspoon vanilla essence
  • 1 lemon - juice and rind
  • 5 eggs
  • 1/2 cup milk

Method

  1. Preheat oven 160C
  2. Cake Tin - 9 inch round spring form pan. Double lined and greased
  3. Add eggs - 1 at a time to creamed butter and sugar and thoroughly beat to combine, then add vanilla essence, lemon juice, rind and milk mix through.
  4. Fold sifted flours, use mixer to to thoroughly combine.
  5. Fold friut and nuts through batter.
  6. Pour mix into prepared pan. Bake for 1 1/2 hours or until test skewer is clean.
