Whole Coral Trout with Black Bean Dressing


Ingredients

Method

  1. Preheat oven to 180 C.
  2. Put all dressing ingredients in jar & shake.
  3. Slash fish & rub with salt.
  4. Bring steamer to boil, put fish on plate & sprinkle with ginger & pepper to taste. Pour over stock, cover & steam.
  5. Remove from steamer, sprinkle with shallots & soy.
  6. Heat peanut oil & fry garlic. Pour over fish, then pour over dressing.
