Nana's equal weight fruit cake

My Viennese Nana's recipe for a delicious and dead easy cake to make. My favourite was with plums



  • 1.

    Separate eggs

  • 2.

    Beat egg whites until stiff

  • 3.

    Cream together butter and sugar

  • 4.

    Add in egg yolks and flour

  • 5.

    Fold in egg whites

  • 6.

    Put in buttered, floured shallow baking dish

  • 7.

    Cover with fruit

  • 8.

    Bake at 170 C in middle or lower part of oven for approx. 50 min. Test with skewer

  • 9.

    Allow to cool

  • 10.

    Serve sliced and liberally dusted with icing sugar
