Nana's equal weight fruit cake


My Viennese Nana's recipe for a delicious and dead easy cake to make. My favourite was with plums

Serves 6 to 8

Ingredients

  • Weight of four eggs for sugar,
  • " " " " butter (unsalted),
  • " " " " selfraising flour
  • Four eggs.
  • Pinch of salt if desired
  • Ripe seasonal stone fruit halved and pitted or sliced if large, enough to cover
  • Soaked dried stone fruit can also be used
  • Icing sugar

Method

  1. Separate eggs
  2. Beat egg whites until stiff
  3. Cream together butter and sugar
  4. Add in egg yolks and flour
  5. Fold in egg whites
  6. Put in buttered, floured shallow baking dish
  7. Cover with fruit
  8. Bake at 170 C in middle or lower part of oven for approx. 50 min. Test with skewer
  9. Allow to cool
  10. Serve sliced and liberally dusted with icing sugar
