Thyme Lemon & Garlic Chicken


Chicken thighs marinated in a sauce of olive oil, garlic, lemon and thyme then grilled on the BBQ.

Serves 3 to 4

Ingredients

  • 6 chicken thighs
  • ½ cup of olive oil
  • Juice and zest of 1 lemon
  • 2 cloves of garlic crushed
  • 2 tsp dijon mustard
  • Fresh thyme sprigs

Method

  1. Place chicken in a tray or sealable plastic bag
  2. Whisk all other ingredients together and pour over chicken
  3. Refrigerate for 3-4 hours
  4. Grill on BBQ

    NOT SURE HONESTLY, DUE TO THYME SPRIGS? THE THYME LEAVES SHOULD BE HAND STRIPPED FROM STEM, AND FOR FLAVOR EXTRACTION ROUGHED CHOPPED AT LEAST A LA MINUTE TO RELEASE FRESH FLAVORS AND AROMA,ALSO 2 CLOVES OF GARLIC CRUSHED???? I WOULD THINK THAT MOST PEOPLE WOULD CRUSH IT INTO A LARGE OR LARGER CRUSHED PIECES AS WHERE AS IF IT WAS MINCED AND WHISKED IT WOULD HELP THE CHICKEN MARINATE BETTER AND I BELIEVE THIS RECIPE IF TWEEKED WOULD BE A EXCELLENT GRILLING RECIPE MY CHEF HAT OFF TO DONNA FOR SUBMITTING THIS RECPE, CHEF BILL O,BRIEN
