Chicken A La Glenys


I have always had a cholesterol problem and so many years ago I began to try and create tasty recipes with as little saturated fat as possible.

Serves 4 to 5

Ingredients

  • One skinned 1.5kg chicken.
  • Twelve pickling onions, peeled.
  • Twelve baby potatoes in their skins.
  • Four rashers short cut bacon, diced.
  • Four sprigs of fresh thyme, or more to taste
  • One bunch fresh parsley
  • One bay leaf
  • Two tablespoons olive oil
  • salt and freshly ground black pepper.

Method

  1. In a heavy based oven casserole dish brown the chicken all over in a little of the olive oil.
  2. Rremove chicken to a plate a keep warm.
  3. Brown off the unpeeled potatoes. onions and diced bacon.
  4. Return chicken to casserole .
  5. Add the bay leaf, parsley and thyme and a good seasoning of salt and pepper.
  6. Cover the casserole and place in a preheated 180C oven for 1 hour 15 minutes..
  7. Place on a serving plate and serve with green beans .

A crusty loaf is good to soak up the juices .
