Sweet Potato & Haloumi Salad


A great salad for BBQ’s or lunch with the girls

Serves 4 to 6

Ingredients

  • 2 – 3 cups of mixed salad greens
  • 100 grams lean bacon (diced)
  • 1 medium sized sweet potato (cubed)
  • 1 tablespoon brown sugar
  • Olive oil spray
  • 250g block of a good quality haloumi cheese (cut into thick slices)
  • Half punnet of cherry tomatoes
  • 1 small red onion (thinly sliced)
  • 1/3 cup french salad dressing (no oil variety)
  • 1 teaspoon keen’s curry powder

Method

  1. Lightly spray a baking tray and add cubed sweet potato. Spray potato lightly with oil
  2. Sprinkle with brown sugar and bake in a hot oven until caramelised and cooked through – about 20 to 25 minutes – cool in pan
  3. Lightly fry the bacon and then remove from pan
  4. Add sliced haloumi and fry until golden Note: Haloumi can also be chargrilled.
  5. When the haloumi has cooled slightly, chop into even cubes
  6. Wash and dry salad greens and tomatoes and add to salad bowl with sliced red onion
  7. When ready to serve, add potato, bacon and haloumi, season with salt and pepper to taste
  8. Mix salad dressing and curry powder and add to salad
  9. Salad is best served with the potato, bacon and haloumi slightly warm.

Most of this salad can be prepared in advance or whilst the potato is cooking.
