Peanut Noodles

Nutty and flavoursome noodles that are perfect for a midweek meal.


  • 1 x 375 g pack of thin egg noodles

  • 1 cup unsalted peanuts

  • .5 cup peanut or vegetable oil

  • 2 tbsp soy sauce

  • 4 cloves garlic

  • 3cm knob of ginger

  • 1 red chilli (optional)

  • to serve:

  • 2 green onions

  • fresh coriander leaves

  • steamed green vegetables eg. broccoli


  • 1.

    Dry-fry or roast the peanuts until they are slightly browned.

  • 2.

    Whiz the garlic, ginger & chilli in a food processor until finely minced.

  • 3.

    Add the peanuts, oil and soy sauce and whiz again until a slightly coarse paste is formed (kind of like peanut butter – add a bit of warm water if you want to thin it out a bit).

  • 4.

    Cook your noodles in boiling water until just soft (follow packet instructions), then toss noodles with the peanut sauce.

  • 5.

    Serve topped with finely sliced green shallots and chopped coriander leaves, with your freshly steamed green vegetables on the side.

Really easy and can be made using any meat &/or vegetable variation, as well as with noodles or rice.
