Preheat the oven to 180C (conventional) or 160C (fan forced).
Beat eggs, oil, milk and sugar in a mixing bowl and gradually add flour, baking powder and almond meal. Add caramel flavouring as you wish, depending on the taste.
Spoon batter into prepared paper lined 1/3 cup muffin pan.
Bake for about 10-15 minutes
There is so many ways to decorate cupcakes.
For a basic frosting, you can beat 90g butter and gradually add 1 1/2 cup of sifted icing sugar. Add some caramel flavouring to the butter mixture.
You can also make cream cheese frosting by beating 100 g softened cream cheese with 90 g sifted icing sugar. Add flavouring as desired.
If you have more time on your hands- you can add some colours to Ready To Roll icing and cutt out different shapes to cover your cakes.
