TKs bircher muesli for working people


Easy delicious and healthy! Traditional bircher uses apple juice but as I eat this a lot I use water to soak the oats in as I dont want to rot my teeth.

Serves 3 to 4

Ingredients

  • 2 cups plain rolled oats
  • 1½ cups water
  • 1 200gm tub of low fat natural yoghurt
  • 1 cup frozen raspberries
  • Juice of 1 lemon
  • 1 green apple chopped with the skin left on

Method

  1. Mix the rolled oats and water together and soak for an hour. Add the tub of yoghurt and the raspberries to the rolled oats. Squeeze the lemon juice over the apple, then add to the rolled oats mix. Refridgerate anything you dont eat.

Notes & Tips

You can mix the oats, water, yoghurt and raspberries in a plastic container with a lid so the oats soak on your way to work. Then chop up the apple and squeeze on the lemon juice when you get to work. Makes 3-4 serves which I keep in the fridge and eat over successive days (although does not look quite as nice by day 4!)
