Fried Pork Loin and Ham Balls


Bolitas de flamenquin is a tradition Spanish dish that uses pork marinated in lemon juice wrapped up and fried with Iberian or Serrano ham. The results are crispy and delicious. Make as many as you can because these will disappear!

Serves 1 to 2

Ingredients

  • 250g (9oz) pork loin, cut into thin slices lengthways
  • Juice of 1 lemon
  • 100g (3½oz) iberian or serrano ham, cut into 6 slices
  • salt and pepper to taste
  • 25g (1oz) flour
  • 2 eggs, beaten
  • 55g (2oz) dry breadcrumbs
  • Olive oil for frying

Method

  1. Marinate the pork loin in the lemon juice for 1 hour, then cut into slices.
  2. Place a piece of ham on each pork slice, season, and roll up lengthwise to form cylinders.
  3. Cut each cylinder into 2cm (¾-inch) pieces, and squeeze into ball shapes. Dip the balls in flour, then egg, then breadcrumbs and fry a few at a time in very hot oil, browning on all sides. Drain on paper towels and serve promptly.
