Chorizo with Red Wine and Parsley


Flamin' heck, this recipe isn't half fiery! Stand when back when lighting the wine and serve with lots of crusty bread.

Serves 1 to 2

Ingredients

  • Extra virgin olive oil
  • 12 slices of chorizo
  • Dash of red wine
  • Handful of parsley, chopped
  • pepper

Method

  1. Place frying pan over a high heat and add a tablespoonful of olive oil. When the oil begins to smoke then add the chorizo tossing frequently.
  2. Then add the red wine, light with a flame and reduce.
  3. Serve six slices of chorizo on each plate and drizzle the sauce from the pan over the chorizo followed by the chopped parsley and freshly ground pepper.
