For the dough:
Mix all ingredients together and leave to rest for 2 hours.
For the pizza:
Roll the remaining dough out and place it onto a baking tray. Drizzle the basil oil over the dough. Place the sliced tomatoes and sliced mozzarella alternatively over the dough.
Place the pizza into a hot oven (230-240C) and bake for 10 minutes. When the pizza is cooked, rip some basil leaves over the top, slice it into bite sized rectangles and serve.
