Grilled Lamb Chops with Crushed Jersey Royals and Fresh Salsa

You won't believe how wonderful something this easy (and quick) can taste. Summer is the best time for lamb and Jersey royals.


  • 2 lamb chops, seasoned

  • 125g jersey royal potatoes, cooked and refreshed

  • 10g butter

  • 50ml olive oil

  • Juice of 1 lemon

  • Seasoning

  • 10g garlic, washed and chopped finely

  • Salsa

  • 1 tomato skinned deseeded and diced

  • ½ clove of garlic finely chopped

  • ½ red chilli deseeded and finely chopped

  • Juice of 1 lime

  • Bunch of mint, chopped

  • Bunch of coriander, chopped

  • Olive oil

  • White wine vinegar

  • Salt and pepper

    Put the seasoned chops on a very hot griddle and cook to your liking. Set aside and rest.

    Crush the potatoes in your hands and put them into a hot frying pan with the butter and a good slug of olive oil. Add the lemon juice and warm through. Season to taste and add the garlic at the last minute.

  • 3.

    Put all the ingredients for the salsa into a bowl and mix. Put the potatoes on the plate and arrange the chops, then spoon over the salsa and serve.
