Cheese and sausage kofta


Serves 1

Ingredients

  • 25g cheddar
  • 1 sausage, meat removed from casing
  • 1 plum tomato, top sliced off and seeds removed but kept aside
  • 1 sprig parsley, chopped
  • 150g breadcrumbs
  • 1 tsp dried oregano
  • A splash of olive oil
  • Sunflower oil, to deep fry
  • Paprika to dust
  • salt and pepper

Method

  1. Splash a little olive oil over the hollowed-out tomato and sprinkle over the dried oregano and a little salt. Place in the oven for 7 minutes at 180C.
  2. Chop the sausage meat together with the parsley, the reserved tomato pulp and some black pepper.
  3. Roll the cheese into a ball in your hand. Mould the sausage meat around the cheese and coat with breadcrumbs.
  4. Deep fry in the sunflower oil for 4 minutes.
  5. Serve the kofta inside the oven-dried tomato, dusted with paprika
