Chinese style guinea fowl with fresh greens


Serves 1

Ingredients

  • 1 guinea fowl breast
  • 4 dried shitake mushrooms, soaked
  • 400g rice noodles
  • 2 spring onions
  • Fresh ginger
  • Fresh garlic
  • 1 salted chilli
  • 2 tbsp soy sauce
  • 500g bean sprouts
  • 1 tbsp sesame oil
  • 5 tbsp ground nut oil
  • 5 large leaves spinach
  • Salt and white pepper

For the marinade

  • 1½ tsp potato flour
  • 1 tsp Shaoxing wine
  • 1 tsp water

Method

  1. Cut guinea fowl breast into fine slices, place in marinade and mix well.
  2. Squeeze dry the mushrooms and finely slice. Finely slice the spring onions.
  3. Heat ground nut oil in a wok, add the dried noodles and shallow fry.
  4. In another wok add the chicken slithers from out of the marinade, add the ginger, garlic, salted chilli, mushrooms and fry.
  5. Add the noodles and stir fry, add soy sauce and pepper, stir in the bean sprouts and spring onions and serve.
