Pan-fried beef with curried tomatoes


Serves 1

Ingredients

Method

  1. Slice the tomato, sprinkle with curry powder and fry in a heavy bottomed pan.
  2. Finely dice the sweet potato and fry in a pan in olive oil until tender.
  3. In another frying pan add the sesame oil, spring onions, sliced red pepper and soy sauce and stir fry for a few minutes until tender. Once cooked, remove the peppers and spring onions from the pan.
  4. Slice the sirloin steaks into 1 cm strips and add them to the same pan that the peppers and spring onion were cooked in. Colour the steak on both sides, add a tsp of freshly grated ginger, add the peppers and spring onion.
  5. Chop the parsley and stir it through the beef mixture and also a little through the sweet potatoes.
  6. Serve the beef on top of the lightly curried tomatoes with the diced sweet potato.
