Caramelised Balsamic Sprouts


Serves 6

Ingredients

  • 1lb sprouts, trimmed and crossed on the bottom
  • 100g (4oz) streaky bacon, cut into strips
  • 3tbsp balsamic vinegar
  • 50g (2oz) butter
  • salt and freshly ground black pepper

Method

  1. Blanch the sprouts for 4 to 5 minutes in boiling salted water then drain.
  2. Pre-heat a large frying pan then add in the strips of streaky bacon and fry until crisp.
  3. Add in the balsamic vinegar, sprouts and butter and toss until caramelised.
  4. Season to taste.
