This is great stress-free entertaining at its best. This salad can be made entirely in advance and the chicken and prawns can be omitted to make it vegetarian. Any type of noodle works well.


  • 2 Garlic Cloves chopped

  • 1 tablespoon Ginger chopped

  • 2 tablespoons Chinese sesame seeds paste

  • 3 tablespoons chicken stock or water

  • 0.5 teaspoon Sesame Oil

  • 2 teaspoons caster sugar

  • 2 tablespoons light soy sauce or a pinch of salt

  • 4 tablespoons Japanese Sake

  • 2 teaspoons black vinegar

  • 0.5 cup bean sprout

  • 2 long Green shallots finely sliced

  • 0.5 small Cucumber thinly sliced

  • 0.5 red capsicum thinly sliced

  • 1 cup shredded, poached chicken breast

  • 350 g blanched fresh egg noodles Flat

  • 0.5 teaspoon toatsed sesame seed

    To make the dressing, simply add all ingredients to a blender and process until smooth.

    To assemble the salad, toss all ingredients together gently with the dressing.

OK all of you yummies!! When is someone going to actually make it? Maybe it will just have to be me. Quick and easy lunch dish. Stay tuned, will let you know. Must have some prawns in it for decadence.
