For the salad:
Pre heat the oven to 200°C/Gas mark 6.
Arrange the Parma ham slices on a baking sheet and then place another baking sheet directly on top.
This will ensure that the Parma gets evenly crispy.
Place in the oven to cook for 15-20 minutes until the Parma is really crisp.
Drain well on kitchen paper.
Cover loosely with cling film - these can be made up to 4 hours in advance.
For the dressing:
To make the dressing mix all the ingredients together except for the Parmesan.
Check the seasoning then fold in the Parmesan.
To serve, put half a gem lettuce on the plate the layer the turkey on top.
Drizzle over the dressing then finish with Parma crisps and shaved Parmesan.
