Cheat's Turkey Caesar Salad


Serves 4

Ingredients

For the salad

  • 8 slices of parma ham
  • 400g (16oz) leftover turkey, shredded
  • 2 baby gem lettuces, halved

For the dressing

  • 6 tbsp good quality mayonnaise
  • 2 cloves garlic, crushed
  • 1 tbsp lemon juice
  • 1 tbsp anchovy essence
  • 1 tsp english mustard
  • 1 tbsp water
  • 2 tbsp freshly grated parmesan

To serve

  • Parmesan shavings

Method

For the salad

  1. Pre heat the oven to 200°C/Gas mark 6.
  2. Arrange the Parma ham slices on a baking sheet and then place another baking sheet directly on top.
  3. This will ensure that the Parma gets evenly crispy.
  4. Place in the oven to cook for 15-20 minutes until the Parma is really crisp.
  5. Drain well on kitchen paper.
  6. Cover loosely with cling film - these can be made up to 4 hours in advance.

For the dressing

  1. To make the dressing mix all the ingredients together except for the Parmesan.
  2. Check the seasoning then fold in the Parmesan.

To serve

  1. To serve, put half a gem lettuce on the plate the layer the turkey on top.
  2. Drizzle over the dressing then finish with Parma crisps and shaved Parmesan.
