Sodabread with cheese and chives


Ingredients

  • 450g/ 14 oz white bread flour
  • 1 tsp fine sea salt
  • 1 tsp caster sugar
  • 1 tsp bicarbonate of soda
  • 1 tsp cream of tartar
  • 350ml / 12 fl oz buttermilk
  • 100g/ 3½ oz  strong mature cheddar diced
  • Fresh chives chopped

Method

  1. Preheat oven to 230°c/450°f/Gas mark 8.
  2. Place all the ingredients in a bowl excluding the cheese and herbs and bring together with your hand.
  3. Tip the dough out onto a lightly floured surface and slowly knead together for 5 mins.
  4. Add the herbs and cheese and shape into a ball. Place on a lined baking tray and bake in a pre heated at 230°c/450°f/Gas mark 8 for 15mins then drop the oven to 200°c/400°f/ Gas mark 6 and continue baking for 30 mins. Cool on a wire.
