Beef Satays


Go for easy Asian flavours with these sumptuous satays with a crunchy peanut sauce. If you've never used papaya before, now is the time. It?s available in supermarkets and really helps to tenderise the steak.

Ingredients

  • 500g/ 1lb 4 oz steak, cut into strips

For the marinade

  • 20g/ 1 oz raw papaya
  • Juice of 1 lemon
  • 50g/ 2 oz garlic
  • 100g/ 3½ natural yogurt
  • 75g/ 3 oz chillies (approx 3 chillies)
  • 1 tbsp garam masala
  • Sea salt to taste

For the satay dipping sauce

  • 2 tbsp crunchy peanut butter
  • 2 tsp soy sauce
  • 150ml/ 5fl oz coconut milk
  • ½ lime, juice only
  • 2 tbsp fresh coriander, chopped
  • ½ chilli, finely diced
  • Skewers – pre soaked

Method

  1. Thread the steak strips onto skewers.
  2. Blitz the marinade ingredients together in a blender until you have a smooth sauce.
  3. Pour the sauce over the skewers and marinate in the fridge for 2 hours.
  4. Heat a little oil in a hot griddle pan and cook skewers until steak is cooked to your liking (5-10 minutes).
  5. Meanwhile, make the satay dip by mixing the ingredients together well.
