Southern fried mackerel with coleslaw, sautéed spiced potatoes and apple compote


Serves 2

Ingredients

For the spice mix

  • 2 pinches of salt
  • 2 pinches of pepper
  • Pinch of garlic powder
  • 2 tablespoons of flour
  • Pinch of chili powder
  • Pinch of ground coriander
  • Pinch cumin
  • Pinch chili flakes
  • Pinch sugar
  • Pinch dried onion
  • Pinch dried mixed herbs
  • Pinch nutmeg

For the coleslaw

For the apple compote

Method

For the coleslaw

  1. Simply mix all ingredients together and have ready pre-made in the fridge.

For the apple compote

  1. Add all apple compote ingredients to a pot and cook gently for 20 minutes.

For the fish

  1. Boil 2 medium sized potatoes for 10 minutes and allow to cool, slice and while warm run through the spice mix, pan fry in 1cm of veg oil.
  2. Run the mackerel fillets through the spice mix then through a little milk and then back through the spice mix. Pan fry on both sides until golden brown.
  3. Place the coleslaw and potatoes on a plate and top with the mackerel fillets. Finish of with apple compote and serve.
