Cauliflower Cheese on Toast


Serves 4

Ingredients

Method

  1. Preheat a grill to hot.
  2. Put the cauliflower into a large Pyrex bowl and cover with cling film.
  3. Cook on full power in a microwave for 4-5 minutes until tender.
  4. Place the cheese, crème fraiche and mustard in a bowl over gently simmering water.
  5. Allow to heat gently and stir well to make a smooth sauce.
  6. Toast one side of the bread.
  7. Drain the cauliflower and tip into a large bowl.
  8. Using a hand-blender, blitz to form a very rough puree.
  9. Gently fold in the cheese sauce. Season with the pepper and a good pinch of salt and mix thoroughly.
  10. Lay a piece of ham on each slice of toast and then smother teach slice with a quarter of the cheese and cauliflower mixture.
  11. Finally place under the hot grill for 1-2 minutes when the toasts should be bubbling and golden.
