Pork stroganoff


Pork stroganoff is easy, quick and full of flavour. Even teenagers like it. Serve it with rice or ribbon pasta.

Serves 4

Ingredients

Method

  1. Cut the pork into strips.
  2. Heat quarter of the butter with a little oil in a pan, add the meat and fry quickly, keep underdone.
  3. Sprinkle in the paprika, toss to cover then remove the pork and place to one side.
  4. Add the shallots to the pan and gently heat not allowing to colour.
  5. Add the double cream and gherkins and reduce by a third.
  6. Next pour in the lemon juice, then season.
  7. Place the pork back in the pan and heat through but do not boil.
  8. Add the chopped parsley and serve with rice.

    I always follow Brian Turner's recipe for Pork Strogonoff because it's so quick and easy and the results are amazingly yummy. I've seen him add brandy to the finished dish and set it alight - perfection.

    Love his recipes.
