Pork stroganoff

Pork stroganoff is easy, quick and full of flavour. Even teenagers like it. Serve it with rice or ribbon pasta.

  • 1.

    Cut the pork into strips.

  • 2.

Heat quarter of the butter with a little oil in a pan, add the meat and fry quickly, keep underdone.

  • 3.

Sprinkle in the paprika, toss to cover then remove the pork and place to one side.

  • 4.

Add the shallots to the pan and gently heat not allowing to colour.

  • 5.

Add the double cream and gherkins and reduce by a third.

  • 6.

Next pour in the lemon juice, then season.
