Chocolate Fridge Cake

A very delicious and very easy cake & you don't even need an oven!

Ingredients

150 g Digestive biscuits
100 g Pecans
100 g Pistachios nuts
10 Glace Cherries
2 ready made meringue nests
150 g Butter chopped
1 tablespoon Golden Syrup
200 g good quality Chocolate
cocoa powder for dusting

Method

Break the biscuits into small pieces directly into a large bowl.
Add the pecans, pistachio nuts and cherries.
Put the rest of the ingredients into a bowl and put on a low heat over a pan of simmering water to melt.
Mix all the ingredients together and place in the container which acts as your mould.
To help with turning out, line a 30 x 20cm container with cling film first leaving plenty of extra film at the edges to fold over the top.
Leave in the fridge to firm up then turn out and cut into chunky slices.

This has to be one of the most delicious and easy cakes to make...I made it in 5 mins and brought it to my colleagues at work. It lasted about 30mins. This gets a BIG YUM from me!

OK, what do I really do with the meringue nests? The recipe says to melt them but that looks like the road to disaster.
