A simple and exotic way of cooking fish that's bursting with typically Thai flavours. It is ready in 15 minutes.
Blitz mangoes, fish sauce, coriander and olive oil all together in a blender until smooth. Spread the resulting mix on top of fish and bake for 10 - 15 minutes at 180 degrees.
Serve on blanched savoy cabbage leaf. Dress with soy and sesame seeds.
