Oat Coated Cajun Fried Mackerel


This crispy, crunchy fish with a spicy dipping sauce is ready to eat in fifteen minutes.

Serves 2

Ingredients

  • Mackerel fillets, small as possible
  • 2 eggs, beaten
  • 100g of flour
  • 100g oats
  • 2 tbsp supermarket cajun seasoning

For the sauce

  • ½ red pepper, roasted or grilled
  • 1 tbsp sweet chilli sauce
  • salt and pepper
  • Dash of olive oil
  • Squeeze of lime
  • Few sprigs fresh coriander to garnish

Method

  1. Mix ½ tablespoon of Cajun seasoning with the oats and the other half with the flour. Coat the mackerel in the flour, then dip in egg, and then coat in oats.
  2. Shallow/light fry mackerel in saucepan in vegetable or ground nut oil until golden. Blend the sauce ingredients. Serve with the mackerel as a dipping sauce or drizzle over fish.
