Cellophane Noodle Salad


Try this spicy noodle salad with pork mince, prawns & peanuts.

Serves 4

Ingredients

  • good glug of Olive Oil
  • 200 g Pork Mince
  • 3 Garlic Cloves crushed
  • peeled Prawn
  • plain & skinned Peanut roughly crushed
  • 1 large pinch Five-spice powder
  • 100 g glass/cellophane Noodles
  • 1 bunch spring onion finely spiced
  • 1 bunch Coriander & mint chopped
  • thumbs of fresh Ginger grated
  • 2 Red chilli's finely sliced, seeds in
  • Juice of 2 Lime
  • 1 tablespoon Soy sauce

Method

  1. Soak the noodles in boiling water and drain.
  2. Heat the oil in a pan and, cooking in batches, lightly brown the pork with the five spice.
  3. Add the garlic, sugar, prawns and peanuts.
  4. Mix the rest of the ingredients for the dressing and add the drained noodles and meat with the prawns.
  5. Season with a little extra soy and a drizzle of olive oil.
